Wild Rice with Smoked Turkey

1 c. dry wild rice

½ c. green or red seedless grapes cut in half

½ c. chopped celery

1 red bell pepper, chopped

2 tablespoons chopped fresh parsley chopped

2 c. smoked turkey

2-3 T. fresh lemon juice

2 tablespoons sesame oil

1 t. freshly grated ginger

Salt & Pepper to taste

6 cups spring greens

Cook wild rice according to package directions with water and cool in refrigerator until cool. Add all other ingredients to a large bowl, add cooked wild rice and stir to combine. Let set for about 15 minutes before serving so that the flavors can combine.  Serve on a bed of spring greens.  Serves 6.
