When you visit our Healthy Living Kitchen, you’ll get connected with nutritionists and health/wellness professionals that are excited to share how food can be used to benefit your body—whether it’s to boost energy, fight inflammation or reduce stress.
Grocery Shopping Class
Cooking healthy starts with buying the right foods at the grocery store. Come shop with Amy, Forest Lake YMCA’s Registered Dietitian and learn how to read labels and make food choices to support your metabolism, boost your energy and help you feel your best. We will meet at the Forest Lake Cub Foods Produce Department at 11:30am. This month we will focus on the how and whys to increasing plant based, whole foods into your eating plan.

Cooking classes will give you (and your family) an opportunity to learn from nutritionists and health/wellness professionals that are excited to share how food can be used to benefit your body. Our certified cooking facilitators will guide the class through the preparation of a meal, with the option for participants to assist in prepping the food. You’ll complete the class by sampling the food you learned to prepare and take home the recipes used during class for reference. This month we are celebrating Earth Day all month with a variety of plant based, whole food recipes.

Amazing Vegan Mac & Cheese (GF) - Friday, April 12th at 12pm with Christa
This vegan mac and cheese recipe is incredibly creamy and cheese like! You won’t believe how delicious dairy free/plant based mac and cheese can be!
Quinoa Enchilada Bake & Fresh Salsa (GF) - Monday, April 15th at 11am with Joan
This vegetarian enchilada bake makes a perfect “Meatless Monday” meal. It is made with quinoa, black beans, corn, cilantro and green chiles topped with an easy homemade enchilada sauce and cheesy goodness! Served with homemade fresh salsa.
Make Ahead Veggie Egg Frittata (GF) - Tuesday, April 16th at 11:30am with Amy
This protein rich frittata is packed with a variety of vegetables and flavor. It makes a great make-ahead breakfast or brunch. This quick and easy recipe is made and baked all in one dish and is great reheated for leftovers throughout the week. Served with fresh fruit.
Lentil Tortilla Soup (GF)*- Tuesday, April 23rd at 11:30am with Amy
This hearty and flavorful lentil based tortilla soup is quick and easy thanks to the Instant Pot. It can be made in the crockpot or on the stove as well. Loaded with protein-rich lentils, colorful vegetables and your choice of flavor packed fixings, it’s a soup everyone is sure to love.
Cauliflower Buffalo Wings & Vegan Ranch (V) - Friday, April 26th at 12pm with Christa
Tender on the inside, crispy on the outside, these Vegan Cauliflower Buffalo Wings are the perfect plant based appetizer. They are quite spicy but tolerable for most when served with vegan ranch dressing.
Bee-utiful Summer Salad (GF)- Sunday, April 28th at 10am with Marnie
This unique salad contains refreshing watermelon, honeydew and cucumber. It is served with a delicious honey citrus dressing and fresh mint. It is a beautiful plant based addition to any meal or snack.
Baked Tofu and Veggie Stir Fry (V, GF)- Tuesday, April 30th at 11:30am with Amy
Stir-fry veggies are a classic, easy favorite. This meal offers a rainbow of color and flavor. You will not only learn how to stir fry vegetables but also how to make your own simple stir-fry sauce and tofu that tastes surprisingly crispy and delicious.

Have a hassle-free birthday party
Celebrate your child’s birthday at the Y with a Cooking Party—and we’ll handle all the details for the special day. Kids will learn about tasty, nourishing foods with age-appropriate group cooking activities, plus get a primer on kitchen safety. There will be time to enjoy the prepared food together, and open presents too. Birthday parties allow you to pick the food and whether you’d like to include an additional art or fitness activity at the Y.

Healthy Living Kitchen Private Rental
The Healthy Living Kitchen is a great way to get your friends together for a cooking session, pump up a team or enjoy family time together without creating a mess at home. Choose between basic kitchen rentals bringing your own food or facilitator led private cooking classes where we provide the food. Both options are limited to two hours and include a certified cooking facilitator. The facilitator led private cooking class guides your group through the preparation of a meal, with the opportunity for participants to assist in prepping the food. Participants will leave with a small sample of the meal you learned to prepare and the recipes used for reference. Groups are limited to 15 people or less. View brochure
